So incredibly moist and delicious, it's hard to have just one serving
Ingredients:
(For a big loaf - divide depending on the size of your baking tin)
- 2 ripe bananas (mashed)
- 1 Lindt 99% cacao chocolate bar
- 1 cup coconut flour
- 2/3 cup oats
- 2/3 cup unsweetened almond milk
- 1/2 cup unsweetened apple sauce
- 1/2 plain Greek yogurt
- 1/4 cup honey
- 1/4 cup calorie free granulated brown sugar sweetener (optional)
- 2 tsp baking powder
- 2 caps of vanilla extract
Instructions:
1. Preheat the oven to 425C
2. In a mixing bowl, mix the bananas, vanilla extract, apple sauce, Greek yogurt, and milk
3. Add the coconut flour and oats and stir until it’s a smooth batter
4. Stir in the sweetener and honey
5. Break apart the chocolate bar into squares and then cut them up into smaller squares before stirring them in as well
6. Spray a rectangular tin with cooking spray before pouring in the batter
7. Pop it in the oven for about 50-60 minutes! Let it cool for 15 minutes before turning it over onto a cooling rack and wait until it is COMPLETELY cool before cutting into it (I usually leave it, go out and do stuff and then come back home, then enjoy. It’s really moist, more like a moist brownie than a banana bread, but tastes delish 😊
