High Protein Peanut Butter cake topped with WaldenFarms caramel and chocolate. Delicious!
Recipe:
Peanut Cake
-1/2c peanut flour (protein plus)
-2 scoops vanilla whey (80g) (I used Jamie Eason's Natural Vanilla Whey Isolate)
-2Tbs coconut flour
-1/2c unsweetened applesauce
-1/4c egg whites
-stevia ~30-40 drops
Caramel
-1/4c of Walden Farms caramel sauce
OR date caramel
Chocolate:
-2Tbs coconut oil
-1/4c Cocoa powder
-1/2tsp caramel extract
-15-20 drops regular or toffee stevia
1)Mix all ingredients together and spread out on a baking sheet (~6x6in square)âž¡ï¸ Bake at 280 for 35min.
2)When done spread caramel sauce on the cake and freeze until the sauce solidifies (~2 hrs)
3) Melt coconut oil then whisk in stevia then cocoa powder. Pour chocolate mixture on top of caramel. (It should solidify b/c the caramel is so cold, but if it doesn't refrigerate until chocolate solidifies)
4) Cut into 8 servings
