Great for dinner, and makes awesome leftovers for the week! Try some on a salad, in a sandwich or even with some eggs in the morning!
Chop all vegetables very small and mix all ingredients together.
Optionally you can add 1/4 c shredded cheese to the loaf and a tablespoon sprinkled on top before baking.
Top loaf with 1 tablespoon of ketchup. Bake covered with tinfoil for first 30 minutes and last 10 without!
Enjoy with mashed potatoes or cauliflower, and your favorite roasted vegetables!
