One of my new FAVORITE recipes and so EASY! Only 4 ingredients with this one too! Honey Dijon Salmon Nuggets..I have died and gone to foodie heaven
Preheat oven to 400 degrees and line a baking sheet with foil. Take 2 4oz salmon filets and cut into bite sized cubes. *Note: Either purchase filets without silver skin or remove. Place honey dijon into a bowl. In a food processor, add rice cakes and Ezekiel and chop until they are crumbs and place in a separate bowl. Take salmon cubes and lightly dip each side into honey Dijon then completely coat with bread/rice cake crumbs and place on foil. Repeat for all cubes. Bake for 20 minutes.
*Tip: Wanted a dipping sauce so combined a little non fat plain Greek yogurt and honey Dijon mustard to dip in.
