This is the perfect fall inspired treat. Take your mugcake to a whole new level by cooking it in a hollowed out apple! Great way to sneak in a serving of fruit with your dessert ;)
Inside out caramel apple mugcake - dairy free, vegan
Mugcake
- 2 tbsp oat flour
- 4 tbsp whole wheat flour
- 1 tsp baking powder
- milk of choice
- 1 large apple
- sweetener of choice, to taste
- optional 1 tbsp vanilla protein powder of choice
Topping
- 1 tbsp date caramel (softened dates + water then processed until smooth and creamy)
- couple tsp pb
- couple tsp dark chocolate dreams
- handful peanuts
Directions
Combine ingredients to make your cake. Cut off the top of your apple then scoop out the inside. Combine ingredients to make your mugcake, adding enough milk to make a batter. Pour your cake batter into the apple then microwave 1min30sec (or until fully cooked). Drizzle with date caramel, peanuts, pb, and dark chocolate dreams.
