These are super simple and quick to make, plus they taste delicious!
Lemon Coconut Cookies
Preheat the oven to 180.
Mix together:
1 cup flour (I used brown rice flour but I imagine almond/oat flour would work),
3 tbsp melted coconut oil,
2 tbsp honey,
1/3 cup shredded unsweetened coconut,
the zest of a lemon,
1/2 tsp vanilla extract,
1/2 tsp baking soda,
1/4 cup almond milk.
Mould into cookies and place on a baking sheet. Bake for around 15 minutes or until cooked through... Then gobble them up!This is very customisable - for example you could add in chocolate chips or raisins depending on what you like.
