Beat the summer heat with this refreshing gazpacho! The combination of mango with the butternut squash and cold coconut almond milk makes for a delicious tropical meal that can be eaten for breakfast, lunch, or dinner.
Ingredients
1 1/2 cups of steamed of butternut squash
2 cups unsweetened coconut almond milk
1 mango, diced
1/2 t of nutmeg/cinnamon
Garnish: mango slices, shredded coconut, nutmeg/cinnamon
Directions
1. Blend the mango, butternut squash, and 1 cup of milk until just incorporated
2. Add the remaining milk and the cinnamon/nutmeg
3. Blend until fully incorporated
4. Garnish with desired toppings
