³ Description

A delicious meaty dish with a Moroccan influence.

² Ingredients

  •  150 g Pork (Lean Only Eaten)
  •  10 g Tomato Puree
  •  1 tsp Lemon Peel
  •  1 clove Garlic
  •  1/2 serving (serving = 1 tbsp) Thai Kitchen Red Curry Paste
  •  1/2 serving (serving = 1 medium pepper) Publix Red Bell Pepper
  •  1 small Red Onions
  •  2 serving (serving = 1/2 cup) Pomi Chopped Tomatoes
   

q Directions

Fry 1 small red onion in coconut oil until softened, add 150g lean pork mince and fry until browned. Add 1 chopped garlic clove, half a tsp of curry paste, the zest of half a lemon, a tbsp of tomato purée and cook for 2 mins. Add 1/3 can of chopped tomatoes, half a red bell pepper and a glug of water. Cover and simmer on a low heat for 20 minutes. I serve mine on a bed of little gem lettuce leaves.
