I can't even begin to explain how wonderful these are! The recipe uses ingredients you'll have in your kitchen, and creates a delicious treat!
Recipe for No-Bake Caramel Peanut Butter Ice Cream Bars:
Bottom layer (Peanut Butter):
1/4 cup natural peanut butter
1/8 cup oat flour
1tbsp vanilla protein powder
Middle layer (Caramel):
5-6 medjool dates, pitted and soaked in water for an hour
2tbsp coconut milk (canned)
1tbsp water
1/4tsp vanilla extract
1/4tsp caramel extract
Pinch of salt
Top layer (Chocolate):
1/4 cup chocolate chips
1-2tbsp crushed peanuts
Method:
Mix peanut butter layer and firmly pack down in pan, set in fridge until hardened. Meanwhile, blend ingredients for caramel. Spread on hardened bottom layer and place in freezer for approximately 90 minutes. Lastly, melt chips and oil and spread evenly on bars and freeze until set. Keep in freezer until eaten.
