Recipe for No Bake Caramel White Chocolate Scoops:
Serving: 5 scoops
Scoops:
3 pitted dates
1/4 cup almond meal
1tbsp honey
1tbsp coconut sugar
1/2tbsp white chocolate chips (crushed)
1/8 tsp caramel extract
Filling:
1tbsp plain non-fat greek yogurt
1/8tsp caramel extract
Method:
Chop dates up finely, and add to almond meal. Microwave honey and sugar for 10 seconds and mix together and then add to dry ingredients. Add extract and chips. Stir mixture. Roll dough into 5 balls and then push in center of each ball. Freeze for 5 minutes. Mix together filling and add into centres. Store in fridge until consumption.
