³ Description

Hot Mulligatawny Soup served on a bed of raw spinach. Just using up some leftover turkey :)

² Ingredients

  •  1/2 tablespoon Extra Virgin Olive Oil
  •  1 serving (serving = 2/3 cup) Kroger Chopped Onions
  •  1 stalk, small (5" long) Celery
  •  1/4 cup, chopped Carrots
  •  1 medium (2-3/4" dia) (approx 3 per lb) Apples (Without Skin)
  •  1/2 sweetpotato, 5" long Sweet Potato
  •  1 cup, diced, cooked Turkey
  •  1 serving (serving = 2/3 cup) Campbell's Vegetable Broth
  •  1/4 tsp Savory (Ground)
  •  1/2 tsp Curry Powder
  •  1 dash Black Pepper
  •  3/4 cup Spinach
   

q Directions

Heat oil in large pot. Saute onion, celery and carrot until onion is slightly soft.

Add broth, apple (chopped), sweet potato (shredded) and spices.
Bring to a boil, then reduce heat and simmer, covered, until carrot is tender.

Traditionally, this soup would be thickened with flour, but sweet potato and apple cook down to make it thicker.

Serve on a bed of raw spinach :)
