So, I had some peaches but didn't want to make the "Certo" cooked jam recipe... so I kinda made up this one... it's a freezer jam. It tastes good, has a smooth consistency, but doesn't look like fresh peach jam... it's darker... and NOT cooked and no added sugar :)
Wash 6 x 250 mL jars and place them in oven on a cookie sheet. Bake them at 350F for at least 10 minutes to sterilize. Boil lids and seals.
Put scalded and peeled peaches and dates in a food processor. Whirl until smooth.
Remove to a large bowl and add vanilla, almond extract and chia seeds. Mix well.
Let sit for 10 minutes.
Makes enough for 6 x 250 mL jars. Fill jars and place lids on. These will NOT seal, as the jam is not hot or cooked.
Each Jar is considered 4 serving, so this batch makes 24 servings (6 jars).
Store jars in the freezer until ready to use.
Great on frozen yogurt ! :)
