I made clean-eating pizza for my kids, but I wanted a paleo pizza for myself... so I took two different paleo recipes and morphed them into one... with a few modifications to suit what I had in the fridge... turned out pretty good!
Crust:
1/2 small rutabaga, shredded (about 2 cups)
2 eggs
1/2 cup almond flour
(you could probably add spices too, as it was kinda plain)
Mix together and press into a lightly oiled pie plate.
Bake at 400F for about 15 minutes.
In the meantime, make the sauce:
Sauce: Note - this makes a lot of sauce (extra sauce can be frozen)
1 - 786 mL can crushed tomatoes
1 tbsp. extra virgin olive oil
1 tsp. basil
1 tsp. oregano
1/2 tsp. salt
black pepper
1 clove garlic, minced
After baking the crust for15 minutes, remove crust from oven. Spread with some sauce. Top as you would regular pizza... I like chopped spinach, some low-fat mozza cheese, diced onion, red pepper, broccoli and bacon sausage.
After pizza is dressed, return it to oven until cheese is melty and topping are hot (about another 10 minutes).
