Fat and Fluffy Peanut Butter Marshmellow (a la Cellucor) Protein Pancakes topped with a peanut maple sauce and melted peaches

² Ingredients

  •  1 serving (serving = 1 egg) Vita Egg Large Brown Grade AA Eggs
  •  0.3 serving (serving = 1 scoop) Cellucor Cor-Performance Whey Peanut Butter Marshmallow
  •  0.3 serving (serving = 1 tbsp) 365 Chia Seed
  •  0.3 serving (serving = 1 tbsp) Now Foods Psyllium Husks
  •  1 serving (serving = 2 tbsp) Coconut Secret Raw Coconut Flour
  •  0.88 serving (serving = 1/2 cup) Quaker 100% Whole Grain Oatmeal
  •  1.3 serving (serving = 3 tbsp) All Whites 100% Liquid Egg Whites
  •  1/2 serving (serving = 1 tsp) Kroger Baking Powder
  •  1/4 serving (serving = 1 cup) Simple Truth Unsweetened Almond Milk
  •  80 g Peach
  •  1/3 serving (serving = 1/4 cup) Trader Joe's Peanut Flour Defatted
  •  0.15 tbsp Cinnamon
  •  0.15 serving (serving = 1 tbsp) Nutiva Organic Extra Virgin Coconut Oil
   

q Directions

Place the 1/3 cup of oats in the blender with the coconut flour, egg, egg whites and whey. Blend until smooth. Mix in the psyllium, chia seeds, 1 tbsp oats, baking powder, cinnamon and 2 tbsp of almond milk. Only add more milk if your batter is suuuper dry, you want it thick! Cook your pancakes using the coconut oil (I got three) on medium-low to medium heat. You want them to cook all the way through. While you cakes are cooking chop and nuke a small peach (hopefully a juicy one) and when your pancakes are done cooking, throw the melty peaches on top. For the peanutty maple sauce I mixed 1 tbsp+1 tsp of peanut flour with a tbsp or two of almond milk, 1/2 tsp lucuma powder (optional superfood) and a lil maple extract. Drizzle over stack and eat! Add more toppings is desired, like I said given I had more macros I would have added some natural sf syrup.
