Ingredients (2 servings): 2 medium chicken breast, 2 red bell peppers, 1 small can diced pineapple (1/2 cup), 1 cup cooked quinoa.
Directions: Season and bake chicken on 375 for 15-20 minutes, gut and roast peppers on 375 for 25-30 minutes. Cook quinoa and dice pineapple and chicken, then mix the three ingredients together and stuff pepper! Boom!
