Mash up your ripe plantain until pureed, add the egg whites, almond milk and dry ingredients and mix until creamy/chunky consistency.
Preheat oven to high heat (350 degree Fahrenheit). Place aluminum foil on a baking sheet with Pam, then take 2 small spoons to mold your your protein balls, place them in the aluminum foil and topped them with toasted Chia seeds and toasted coconut flakes, put in over for about 15-20 min or until golden!
