³ Description

One of my absolute favorites! The mixture of cinnamon, cardamom, ginger and cloves deliver a wonderful flavor!

² Ingredients

  •  1/2 serving (serving = 1 tsp) Kroger Baking Powder
  •  1/2 tablespoon Orange Peel
  •  1.75 serving (serving = 1 cup) Fage Total 0% Greek Yogurt
  •  30 g Cream Cheese (Fat Free)
  •  1.5 tsp, ground Cardamom
  •  1/2 cup Skim or Nonfat Milk (0.5% or Less Butterfat)
  •  2 tsp Cinnamon
  •  1 tsp Baking Soda
  •  1 tsp Cloves (Ground)
  •  1.5 tsp Ginger (Ground)
  •  2 medium Egg
  •  2 serving (serving = 5-8 drops) Sweet Leaf Liquid Stevia
  •  2.4 serving (serving = 1/3 cup) Arrowhead Mills Organic Oat Flour
  •  9 serving (serving = 1 tsp) Sweet Tree Organic Coconut Palm Sugar
  •  9 serving (serving = 1 tsp) Now Foods Erythritol
  •  10 serving (serving = 1 tsp) Sensato Erythritol Powder

q Directions

Separate the egg whites from the yolks. Whisk egg whites and 15 drops vanilla stevia drops until stiff. Set aside.

In mixing bowl combine: yolks, coconut palm sugar, erythritol, 200 g greek yogurt, orange zest and milk.

In another bowl combine: oat flour, vanilla whey, baking soda, baking powder, cinnamon, cardamom, ginger and cloves. Add to the mixing bowl. Mix well together. Then add the egg whites and gently stir together.

Use a 20 cm round cake tin or a bread tin (use muffin wrappers if there is extra batter left). Bake at 200 degrees Celsius for 25-30 minutes.

For the frosting, mix low fat cream cheese, greek yogurt, vanilla stevia and powdered erythritol until you get the preferred consistency and flavor.
