A simple fall cookie recipe, high in protein, low in fat and sugar. Add ground vanilla beans and use vanilla flavored protein powder for an extra kick of flavor in these cookies!

q Directions

Preheat oven to 350 degrees Fahrenheit.
Mix together protein powder and flour in one bowl, all other ingredients in another.
Combine ingredients slowly being careful not to overwork.
Shape dough into 30 flattened balls (or any amount you prefer, adjusting portion sizes to fit your dietary needs). Optionally sprinkle cookies with brown sugar, or crushed nuts.
Bake for ~12 minutes, watching for edges to brown.
Remove from oven and set aside to cool.
