A high protein alternative to an old favorite.
Recipe for 1 single serving. Measure 1/4 cup of dry quinoa and cook as per instructions on bag. Once water cooked and water is absorbed, add 1/2 cup of unsweetened almond milk and 2tbsp of raisins. Stir and bring to a boil. Reduce it and let simmer until it thickens. Once done, remove from heat and stir in cinnamon, and stevia to taste (packets or drops. I used liquid coconut stevia drops). Refrigerate until cold. Sprinkle with cinnamon, extra raisins, and shredded coconut , and serve.
