Traditional red velvet cupcakes with vanilla protein icing! Made with beets!
Cakes
1 1/2 c whole wheat pasty flour
3 tbsp cacao powder
1/4 c stevia
1/4 c coconut sugar
1/2 tsp baking powder
1 scoop protein (optional)
1 tsp cinnamon
1/2 tsp baking soda
1 tsp vanilla extract
1 egg
5 tbsp egg whites
1 c beets puréed
1/4 c greek yogurt
Dash almond milk
1 tbsp melted coconut butter
Icing
1/2 c vanilla greek yogurt
1/2 c fat free coconut milk
2 tbsp stevia
1 tsp xanthan gum
Directions Preheat oven to 350. Met wet and dry ingredients separately, slowing fold wet into dry while mixing. Around 2.5 tbsp in each muffin tin. Let bake for 10-15 mins. Let cool completely! Mixing icing ingredients together and ice cakes! Enjoy!
