Perfect weeknight dinner- simple and delicious!

² Ingredients

  •  1 fruit (2-1/8" dia) Lemon
  •  2 large Egg White
  •  1 dash Salt
  •  1 tbsp chopped Chives
  •  10 oz Tilapia (Fish)
  •  3/4 serving (serving = 1 tbsp) Spectrum Organic Virgin Coconut Oil
  •  2 serving (serving = 5 crackers) Ritz Whole Wheat Crackers

q Directions

Preheat broiler on high. Rinse 2 5oz tilapia fillets and lightly season with salt. Crush 10 whole wheat ritz crackers. In a medium skillet over medium high heat melt coconut oil and stir in ritz crackers until lightly toasted and fragrant. Remove cracker crumbs from pan and pour onto a plate for breading. Beat two egg whites and dip each tilapia filet making sure to fully coat. Press tilapia fillets into cracker crumbs and flip and press crumbs onto the other side again making sure to fully coat. Place fillets on a baking sheet and place under the broiler (5 in away) for 10 min or until lightly browned and fully cooked (time depending on strength of your broiler). Garnish with chopped chives and lemon wedges. Serve immediately.
