Super easy zucchini bread in pancake form!

q Directions

Using a coffee grinder or blender, grind 25g of dry instant oats into a flour consistency. In a small bowl combine 1 mashed banana, ground oats, egg whites, 2-3 packets of Stevia, baking powder, cinnamon, a dash of nutmeg and 100 g of grated zucchini. Mix well. Heat a medium sized skillet over medium/ low heat. Spray nonstick pan with cooking spray. Pour 1/3 of batter into pan. Flip when edges are dry and bubbles form. Repeat with the remaining batter. Top with any nut butter or syrup you wish!
