Healthy version of a bloomin' onion baked and with a spicy dipping sauce.

q Directions

Preheat oven to 350 F convection. Cut the top only off a large sweet yellow onion and peel away outer layer. Using an apple slicer press down on onion almost all the way to the bottom leaving the petals in tact. With a knife cut sections of petals in half to make the petals thinner. Remove what would be the “core” and throw away. Take two egg whites and beat adding a tiny bit of water to thin out. Totally drench onion in egg whites - get your hands in there and makes sure to get in all the crevices. In a small bowl combine 1/4 tsp of garlic powder, 1/8 tsp paprika, pinch of salt and pepper, 1 TBS whole-wheat flour, and 2 TBS almond flour. Roll onion around in mixture and sprinkle excess mix slowly over onion making sure to get in the petals well. Bake for about 20 min on a baking sheet or until golden brown. Top with 1 TBS chopped parsley.
Dipping sauce: Combine Greek yogurt, sriracha, and 1 TBS of parsley.
