A big bowl of lemon poppy seed muffin batter!
In a large microwave safe bowl, combine 3/4 cup of oatmeal, and 1 1/2 cups almond milk or water. Microwave on high for 5 min making sure not to let it overflow. Stir in 1/2 tsp lemon extract (or 1/2 lemon zested) , 2-3 packets stevia, and 1 tsp poppy seeds. For icing: combine 1/2 scoop vanilla protein powder and 2-3 TBS almond milk or until its a drizzle-able consistency. Top with 1/2 TBS of favorite nut butter.
