A healthy version of the classic Snickers Ice Cream bar
Microwave the sugar free chocolate chips and the coconut oil for about 45 seconds or until melted. Stir together and add cacao powder and Stevia. The amount of Stevia you add depends on how sweet you would like your chocolate. If you prefer a more bitter tasting chocolate, use less.
Using about half of the mixture, pour into 3 dessert bar tray molds.Freeze for about 5 minutes.
For the filling, mash the dates and combine with peanut butter and agave syrup. Consistency will be thick. Remove the tray from the freezer and add the filling to each mold, spreading it evenly across.
Top each mold evenly with 1 tbsp of fat free Cool Whip. Cover each with remaining chocolate and freeze for 20 minutes or more to ensure the Cool Whip is frozen.
