Need a little creativity at lunch time? Try this sandwich, you might need to make 2!
Directions
Fish:
Heat up medium sized skillet, with avocado oil. Have 3 separate plates ready, one with bread crumbs, flour, and eggs. Dip your fish into the flour, then the eggs, followed by bread crumbs. Add to skillet and let cook through on both sides or until bread crumbs turn golden brown. (sole, flour, bread crumbs)
Coleslaw:
Take coleslaw mixture and add to bowl, add all ingredients together and mix up. (greek yogurt, garlic powder, dijon mustard pepper)
Sandwich:
Spread a little bit of greek yogurt on both sides of bread and build up your sandwich. I added mine to the panini maker to make it extra delicious!
