I used wonton wrappers as opposed to pastry and they came out great! The ricotta is a lower fat alternative to feta, and tastes delicious when seasoned. They were easy to make and only include 4 main ingredients
Ingredients (for 10):
10 wonton wrappers
1 cup of baby spinach, chopped (or less)
5 tbsp light ricotta
3 tbsp of egg whites (or less)
Desired Seasoning (I used pepper, dilweed, and garlic powder
Directions:
Preheat the oven to 350
Line a cooking sheet and spray with non-stick spray
Mix your ricotta with desired seasonings
Combine with chopped spinach
Dip the edges of a wonton wrapped in egg whites and lightly brush it with more egg whites
Spoon around 1/2 tbsp of filling into a wrapper and fold in and press the corners
Brush with egg whites to secure the edges and sprinkle with more seasoning
Repeat for the remaining wrappers
Place on baking sheet and bake for 10-13 minutes, or until the edges are brown and crispy
Remove and let cool
