FOR CRUMBLE: blend cashews in blender to create a flour. Place in a bowl, and mix with 2 tbs of coconut nectar, salt, and almond extract. (Set aside)
FOR FILLING: blend strawberries, coconut butter, 1 tbs of nectar, lemon, water, and vanilla. This should be thick and ice cream like. Place in freezer for 20 minutes to harden if necessary
TO ASSEMBLE: take shot glass and press a little of the crumble in the bottom, spoon filling on top and sprinkle with more crumble! ENJOY
