This sweet bean squash can accompany your meal or be the main dish!

² Ingredients

   

q Directions

PreHeat oven at 400 degrees
Cut Butternut Squash in half (length-wise) and scoop out seeds
Lightly rub with Coconut Oil & sprinkle with Cinnamon
Bake for about 35 minutes or until soft
In a small saucepan, simmer:
1/2 Cup Cannellini Beans (rinsed well)
1/8 Cup Water
1/2TB Honey
1/2 teaspoon Pumpkin Pie Spice
After about 8-10 minutes, Add 2 small handfuls of Chopped Baby Spinach and remove from heat
Fill Squash with bean mix
Broil for 1-2 minutes
Serve & Enjoy!
