Amazing and healthy carrot cookies that will work perfectly even as a filling breakfast. You will be making them over and over again.
Mix 1 tbsp chia seeds with 3 tbsp water and set aside for 5 minutes( this will replace the egg). 5 minutes later add 1 cup oat flour, 1/2 cup old fashioned oats, 1 tsp baking powder,1 tsp cinnamon, 1/4 cup chopped walnuts, 2 tbsp raisins, 1/2 cup honey or agave syrup, 1 cup grated carrots, 1/2 tsp vanilla, 2 tbsp melted coconut oil, 2 tbsp unsweetened apple sauce, 1 tbsp coconut flakes (optional). Mix dry ingredients and separately mix the wet ones. Combine the two together and let it sit for 20-30 min to help oats soften and raisins to plump. Shape into 6 cookies and bake at 350F for 25 min. Enjoy.
