Vegan Sweet Potato Quinoa Chili

² Ingredients

  •  2 serving (serving = 1/2 cup) Trader Joe's Organic Black Beans
  •  1 tbsp Cumin
  •  2 oz Sweet Onions
  •  2 cup, cubes Sweet Potato
  •  1 serving (serving = 1 cup) Emeril's All Natural Organic Vegetable Stock
  •  1 serving (serving = 1/4 tsp) McCormick 5th Season Chili Powder
  •  1 serving (serving = 2 tbsp) Trader Joe's Organic Tomato Paste
  •  1 serving (serving = 1/4 tsp) Tone's Oregano
  •  4 serving (serving = 1/4 cup dry) Trader Joe's Organic Red Quinoa
   

q Directions

Recipe:
1 16 oz can of organic black beans
1 6 oz can of organic tomato paste
1 cut up white onion
1 tablespoon chili powder
1 tablespoon cumin powder
1 teaspoon oregano
1 cube vegetable stock
1 cup dry red quinoa
1 7 oz sweet potato (diced, no need to peel)

In a large soup pot, heat the onion (no need to add olive oil, just stir frequently). Cook until golden brown, this will take about ten minutes on medium heat. add the tomato paste, chili powder, cumin, and oregano. cook for 2 minutes, stirring constantly. add black beans, vegetable stock, and sweet potato. cook for five minutes. add quinoa. continue cooking for 15 - 30 minutes (until quinoa is cooked).

Serves 6.
