I liked it... a sweet, but healthier version to apple crisp. I think next time I will cut back the sweetener on the apples and maybe add a bit more rolled oats.
I saw a similar recipe on a website... I wanted to try it, but only on small scale... so here's what I came up with...
1 tart apple, cored and diced (I didn't peel it, because I like the peel)
1 tbsp. sucanat
1 tbsp. agave nectar
cinnamon to taste
vanilla to taste (just a touch)
I mixed this together in a microwaveable cereal bowl.
1/8 cup old fashioned rolled oats
1/8 cup almond meal
1 tbsp. sucanat
1 tbsp. agave nectar
1 tbsp. ground flaxseed
cinnamon to taste
I mixed this together in a separate bowl until it looked like a crumble topping.
I put the crumble topping on top of the apple mixture, then microwaved it for 2 minutes.
