Single-serve apple pie with #quest bar pieces One of my all time favourite desserts made healthy! I layered apple pie quest bar pieces on the bottom so it got all gooey and melty and delicious :)
Crust:
2tbsp oat flour
1tbsp almond meal
1 teaspoon COLD coconut oil/butter
1 to 2tbsp cold almond milk
Pinch of salt
Sweetener, to taste
Filling:
1/3 apple pie quest bar
Half an apple, diced into small pieces
Cinnamon, to taste
Sweetener, to taste
Peanut butter cinnamon cream:
1tbsp peanut flour
2tbsp of almond milk
Pinch of salt
Cinnamon, to taste
Preheat oven to 200c. Combine all dry ingredients in a bowl. Add your coconut oil and rub it into the flour with your finger tips. Once the mixture looks like coarse bread crumbs, add 1 tbsp almond milk to pull the flour together into a dough - add more if needed but it should just be sticky, not wet. Pat into a disc, wrap in cling wrap and freeze for 15 mins. Using a rolling pin, roll your dough out and line into a greased mini tart pan. Bake for around 5 mins or until the crust is starting to colour. Remove crust and reduce heat to 170c. Tear your quest bar into small pieces, flatten them slightly and place at bottom of crust. In a small bowl: microwave apple, cinnamon, sweetener and a little water for 1 minute to soften - add pieces on top of your quest bar. Bake for around 8-10 mins or until the apples are golden. Combine all ingredients for cream and serve on the side.
