q Directions

Preheat oven to 175c. Line a baking tray with parchment paper. Stir together shredded coconut, peanut flour and salt - set aside. In a clean bowl, beat egg whites to soft peaks then add sweetener and vanilla extract. Continue to beat until stiff peaks form. Carefully fold in coconut mixture and dollop onto parchment paper. Bake for 10 minutes, or until macaroons are golden. Serve immediately or allow to cool to room temperature before storing in an airtight container.
