A delicious twist on a classic breakfast. Gotta love the crispy little coconut pieces!
In a shallow plate, combine all ingredients except bread and shredded coconut. Soak bread in the mixture for a few minutes on each side. Heat up a frying pan on low to medium heat and spray with non-stick spray. Spread shredded coconut on a plate and coat each side of the bread generously. Gently place into your heated pan, cook for a few minutes or until browned then flip and repeat on the other side. Serve immediately and top with desired toppings.
