These make a quick and easy breakfast for busy mornings!
Preheat oven to 170c. Cut each slice of bread into 9 squares. Combine remaining ingredients in a shallow plate (except for strawberries) and leave bread to soak in the liquid. Meanwhile, cut strawberries into small pieces. Spray a muffin pan with non-stick spray and lay 4 to 5 squares of bread in each hole. Top with chopped strawberries and bake for 12 minutes, or until the bread is set and tops are golden. Garnish with more strawberries, cinnamon and shredded coconut.
