Perfect combo to stuff your sweet squash
Pre-Heat Oven at 375 degrees
Cut Squash in half (lengthwise) and scoop out seeds
Sprinkle with Cinnamon
Bake for about 35 minutes or until soft
In a small bowl, Mix:
1 1/2 TB LowFat Cottage Cheese
1 1/2 TB Almond Butter
(heat in microwave for 10 seconds, if needed, to mix better)
Spoon into Squash & sprinkle mix with more Cinnamon, if desired
( I used a fairly small squash - about the size of my hand. If you're using a larger squash, you want to add 1/2 TB more of each filling ingredient)
Broil on high until slightly browned on top (about 2-4 minutes)

Use Crunchy Almond Butter for some texture!
