³ Description

Perfect combo to stuff your sweet squash

² Ingredients

  •  1 oz Butternut Winter Squash
  •  1/2 tsp Cinnamon
  •  3/4 serving (serving = 2 tbsp) Maranatha No Stir Creamy Almond Butter
  •  1/4 serving (serving = 1/2 cup) Breakstone's Low Fat Cottage Cheese
   

q Directions

Pre-Heat Oven at 375 degrees

Cut Squash in half (lengthwise) and scoop out seeds

Sprinkle with Cinnamon

Bake for about 35 minutes or until soft

In a small bowl, Mix:
1 1/2 TB LowFat Cottage Cheese
1 1/2 TB Almond Butter
(heat in microwave for 10 seconds, if needed, to mix better)

Spoon into Squash & sprinkle mix with more Cinnamon, if desired

( I used a fairly small squash - about the size of my hand. If you're using a larger squash, you want to add 1/2 TB more of each filling ingredient)

Broil on high until slightly browned on top (about 2-4 minutes)

**ChefTiffy Tip**
Use Crunchy Almond Butter for some texture!
