A perfect options to handle the pasta cravings, without weighing you down!
Chop up all vegetables and add to pan with olive oil, sweat until translucent. Add seasoning and stir, letting the vegetables cook for another minute before adding the balsamic. Turn to low and let simmer for 10 -15 minutes
Get the water boiling right before adding the balsamic to the vegetables. Once pasta is done, drain and add sauce directly to the pasta.
