If you havent made anything for lunch, then consider making this vibrant colorful salad. It took me under 12 min. Yes I timed it

² Ingredients

  •  10 cherry Tomatoes
  •  1 small (3" long) Young Green Onions
  •  2 serving (serving = 1 cup) Great Value Romaine Lettuce
  •  1 dash Black Pepper
  •  2.5 sprigs Dill
  •  1 dash Salt
  •  1 lemon yields Lemon Juice
  •  1.5 cup slices Cucumber (with Peel)
  •  1 clove Garlic
  •  4 serving (serving = 1/2 cup) Trader Joe's Organic Garbanzo Beans
  •  1 tablespoon Extra Virgin Olive Oil
  •  2 cup Black Beans
   

q Directions

Set the timer and let get started: drain one can of beans and one can of chickpeas (I buy #organic and no salt added cans). While these are draining I put a song on my laptop and start chopping tomatoes, cucumbers, green onions, romaine lettuce and dill. Add drained beans. Drizzle over lemon juice, fresh squeezed garlic and 1 tbsp of olive oil. Salt pepper to taste. Mix and BOOM 💥 you have delish meal full of healthy carbs and protein. Tastes the best if chilled.
