Add in your favorite berry for the most delicious and simple paleo/vegan strudel bars, perfect for a sweet tooth!
Crust: Mix together in a bowl; 1c almond flour, 1/2tsp salt, 1 TBSP coconut oil and 1 TBSP butter extract, and 1 TBSP Water. Press 1 TBSP of crust mixture into a PAM Sprayed muffin tin and bake at 350 for 12 minutes until lightly browned, cool slightly before adding in filling. Filling: Mash 1c berry of choice in a small bowl and spread 1 TBSP of berry mash onto each muffin crust. Strudel: Mix 2 TBSP Coconut Oil, 2 TBSP Almond Flour, 1tsp butter extract, 6 Stevia packets, 1/4tsp salt, 1/2c chopped walnuts, and 1/4c unsweetened shredded coconut. Mix together and spoon 1 TBSP of strudel mixture into berry filling in each muffin cup, then bake at 350 for 12 minutes. Cool and enjoy with ice cream!
