High protein one of a kind french macaron recipe.

Macarons:

Beat egg whites and salt in the bowl of a stand mixer fitted with a whisk attachment until whites are foamy; beat in 1/4 cup of coconut sugar and continue beating until egg whites are fluffy and hold soft peaks. Next, in a separate bowl, sift protein powder, remaining 1/4 cup of coconut sugar, 8 drops of Stevia, and almond flour in a then quickly fold the almond mixture into the egg whites, about 30 folds.
When batter is mixed, spoon into a pastry bag fitted with a plain round tip. Pipe the batter onto the baking sheet in rounds, leaving space between the disks.
Preheat oven to 300 degrees.
Bake cookies until set but not browned, about 15 minutes; let cookies cool completely before filling.

Filling:
In a small bowl mix together filling ingredients, 1/2 cup of nonfat yogurt, 30 grams of vanilla protein powder, and 8 drops of stevia. Let stand in the refrigerator to harden a bit. Once, the rounds have cooled, spread filling on flat sides of half of cookies; top with remaining half.
