I made this on a whim for a neighborhood picnic and it was a complete hit! Which translates to "you need to make this now. right now. GO!"
Blueberry + cherry crumble
filling
ingredients
2 cups frozen or fresh blueberries and sliced cherries (plus 1/2 cup for topping)
3/4 cup + 1/4 cup water, divided
4 tbsp cornstarch
1/4 tsp almond extract
Sprinkle of cinnamon
Crust
ingredients
3 cups oats
Cinnamon and nutmeg, to taste
1/4 cup agave (or another liquid sweetener)
1 cup brown sugar
1/4 tsp almond extract
1/2-3/4 cup coconut milk
directions
1) for the filling, combine your blueberries and 3/4 cup water. Bring to a boil. In a separate small bowl combine your 1/4 cup water and cornstarch. Add to your blueberry mixture and stir until thickened. Remove from heat and add your almond extract and cinnamon. Place mixture in a bowl and set aside.
2) for your crust, combine all ingredients. Press 75% of the mixture into the bottom of an 8x8in pan. Spray a smaller pan and spread the rest of the mixture into this pan. Bake at 375 degrees for about 20 minutes or until it starts to harden and crisp up.
3) let cool before adding your filling on top. sprinkle your remaining crust on top then top with cherries.
4) chill for about an hour and serve.
