try this gluten free & nutritious pancake recipe!
1 cup buckwheat flour
1 cup unsweetened almond milk
1/2 cup low fat cottage cheese
1/4 cup water
1 egg
1 tsp baking powder
1 tsp vanilla extract
1 apple thinly sliced
1 scoop vanilla protein powder
1. put all wet ingredients in blender until smooth
2. transfer to bowl and mix with remaining ingredients, except for the apple.
3. scoop batter on pan 1/4 c at a time and place apple ring in center
4. cook until bubbly and flip over
