3/4 c oat flour
1/4 c ground flax
1/2 c baking stevia
1/4 c unsweetened cocoa powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla
1 egg
2 egg whites
2 tbsp. unsweetened almond milk
2 tbsp. dried cranberries
2 tbsp. crushed pistachios
1 scoop vanilla whey
topping (optional)
1 tbsp. melting chocolate
1 tbsp. crushed pistachios
-preheat oven to 350
-mix dry ingredients in a bowl and wet in another bowl. combine wet to dry
-fold in nuts and cranberries. roll dough 2inches thick and place on greased loaf pan (dough will be slightly sticky)
-bake for about 15-20 min or until firm to the touch. remove from oven and cut into slices
-place slices face up and put back in oven for about 5 min each side.
-let cool and drizzle melted chocolate and nuts
-store in air tight container
