Protein Cookie dough truffles:
2 scoops vanilla protein
1 can chickpeas, drained and rinsed well
2 tbsp oats
1 pack stevia
2 tbsp almond butter
2 tsp vanilla extract
2 tbsp cacao nibs
Raw cacao to coat
Mix all ingredients except for cacao nibs and cacao powder in a food processor. Combine well!! Stir in cacao nibs. Refrigerate dough for ~1h. Roll dough into balls and coat with cacao powder. Store in fridge until ready to eat. Enjoy!
