INGREDIENTS
Mugcake
2½ Tbsp. Giant Sports peanut butter chocolate protein powder
2½ Tbsp. oat flour
2 Tbsp. chocolate PB2
2 Tbsp. granulated stevia
2 Tbsp. sugar free maple syrup
2 egg whites
2 Tbsp. pumpkin puree
1 Tbsp. 0% fat plain greek yogurt
1 Tbsp. all natural peanut butter
¼ tsp. baking powder
Peanut Butter Icing
1 Tbsp. PB2
1 Tbsp. sugar free butterscotch pudding mix
Chocolate Icing
1 Tbsp. cacao powder
1 Tbsp. stevia
1 Tbsp. sugar free chocolate pudding mix
1.) Whisk mugcake ingredients together in a small bowl until batter is smooth.
2.) Pour mugcake batter into mug or bowl sprayed with non-stick cooking spray. I used a larger bowl for this recipe since it makes a larger mugcake. Microwave for 2 minutes or until mugcake is cooked completely.
3.) To make the peanut butter icing, combine all PB icing ingredients together and whisk until smooth, slowly adding water until desired consistency is reached.
4.) To make chocolate icing, whisk together chocolate icing ingredients while slowly adding water until desired consistency is reached and icing turns smooth.
5.) Once mugcake is cooled, top with both icings.
