Your favorite breakfast food turned healthy!! A thin crepe filled with yummy flavors of white chocolate and raspberry that is healthy and guilt-free!
Vanilla Crepes with White Chocolate Protein Fluff and Raspberry Jam
INGREDIENTS
Crepe
30 g (about 1/4 cup) oat flour
2 egg whites
½ tsp cinnamon
1 tsp granulated stevia
¼ cup unsweetened almond milk
White Chocolate Protein Fluff
½ scoop vanilla protein powder (I used Giant Sports)
¼ cup plain greek yogurt
1-2 Tbsp sugar free white chocolate syrup (I used Torani)
4g sugar free white chocolate pudding mix
Raspberry Jam
½ cup fresh raspberries
2 Tbsp sugar free maple syrup
INSTRUCTIONS
1.) Combine all crepe ingredients in a blender and mix/blend until batter is smooth and lump-free.
2.) Combine all protein fluff ingredients in a small bowl and stir until well incorporated.
3.) Place raspberries in a small, heat-proof bowl and microwave for about 20 seconds. Remove from microwave, mash with a fork, and add sugar free maple syrup. Stir together & set aside.
3.) Heat non-stick skillet on stovetop over medium heat. Pray with cooking spray and pour about ½ of the crepe batter on pan. Cook until small bubbles form them flip and cook on the other side.
4.) Once crepes are cooked, evenly distribute the protein full filling and raspberry jam among the two crepes. Top with additional raspberry jam, protein fluff, and maple syrup. Makes 2 large crepes total.
