Delicious low carb side dish! Easy, yummy and full of flavor!
Cilantro Lime Cauliflower Rice
🚠1 head cauliflower
🚠1 cup sliced baby Bella mushrooms
🚠1/2 white onion fixed
🚠1 clove garlic minced
🚠1/4 cup white wine
🚠1/2 tsp red pepper flakes
🚠1/4 cup chopped cilantro
🚠juice of 1 fresh lime
🚠1/4 cup almond mozzarella cheese (optional)
🚠salt and pepper as desired
Directions:
Grate cauliflower into "rice" and set aside. Sauté diced onion and garlic in a greased pan over medium heat for 2-4min. Add mushrooms and cook for another 2min. Add spices salt and pepper. Add wine and reduce until mushrooms are tender about 5-7min. Add cauliflower rice and cook for 3-5min. Add almond cheese, lime juice and cilantro and serve! Enjoy!
