Here is a healthier alternative to your typical Rhubarb Crisp! It's delicious!
Mix filling ingredients together. Pour into 8 x 8 inch baking dish.
Mix topping ingredients together. Crumble on top of filling.
Bake 30 - 35 minutes (or until rhubarb is soft and bubbly).
Filling:
4 cups diced rhubarb
1/4 cup organic cane sugar (or sucanat)
1 tsp. cinnamon
Topping:
1/2 cup old-fashioned rolled oats
1/2 cup whole wheat pastry flour
2 tsp. organic cane sugar (or sucanat)
