You won't feel guilty eating more than just one! They're moist and delicious, it's hard to believe they're clean
1. Preheat the oven to 350
2. Line a baking tray with foil and spray it with cooking spray
3. Put 2 cups of oats into a food processor or blender to turn them into oat flour (you should have 1/2 cup oats remaining!)
4. Mix dry ingredients (except chocolate chips) and wet ingredients separately (melt your coconut oil before adding it to the dough)
5. Fold in the chocolate chips
6. Scoop teaspoons of the dough onto the tray and using a spoon/your fingers shape and flatten them to make them more like traditional oatmeal cookies
7. Bake for 7-10 minutes
